When the weather's lousy (or even when it's not), we turn to noodle soup. We love these refrigerated packets that have noodles + sauce in them, and they are the base for our creations. Baby bok choy, mushrooms, shrimp, fish sauce, cilantro, carrots... whatever produce needs to go! Saute the vegetables in sesame oil, add the water and some seasonings, a dash of fish sauce, maybe some seaweed and let it simmer for 10 minutes or so, and then enjoy your big bowl of brothy goodness!
